Perfect Oatmeal (8)

The kiddies love it!

I never liked oatmeal.  I always found the texture and bland taste to be extremely unappetizing.  So I gave up on ever wanting to eat it until I started making it for my kids and like any good mother, demanding they eat something hearty and healthy that would fill their bellies and hold them over until lunchtime!  And then I made a huge mistake-my youngest refused to eat her oatmeal one morning and instead of just letting it go, I said, “Look!  This stuff is great!”, taking a huge spoonful into my mouth.  I think I may have spit it into a napkin and definitely rushed for the nearest cup of coffee to console my palette.  Needless to say my youngest never finished her bowl of breakfast oats that day….or for the next year!  Then one day I decided that I needed to do something about us not liking oatmeal.  After all, it is extremely good for us and does keep us full and energized for hours.  And like I have said before, I like a good challenge!  Soon after my decision to make up with oatmeal I came to the realization that if nothing else, it is merely a blank canvas just waiting for me to create something beautiful, healthy, and satisfying.  After experimenting with various flavors, I came up with the perfect bowl of oatmeal.  Now ironically enough I crave this rustic bowl of creamy goodness, making it at least once a week.  The only problem with this is that I have to share it with my youngest every time!



½ cup old fashioned oats (not instant)

1 cup of skim milk

Pinch of kosher salt

¼ cup dried blueberries

¼ cup of walnuts

2 Tbsp. shredded coconut

1 tsp. brown sugar



Put the oats, milk, and salt in a microwave-safe bowl, making sure the bowl is at least twice the size as the oatmeal (when heated the milk expands quite a bit and if the bowl is too small it will make a horrible mess as it spills over the edge ).  Microwave for 1 ½ minutes and then remove from oven, giving it a stir and adding the blueberries, coconut, and sugar.  Put the bowl back in the microwave for 1 ½ to 2 ½ minutes, or until the milk and oats become creamy and thick.  Add the walnuts and get yourself a nice cup of tea or coffee to go along with this simple and delicious breakfast (or mid-day snack)!
